I picked up a free Mangrove Jack cider kit at NHC this year and was wondering if it would be suitible to use as a base for a pseudo-ice cider? My plan would be to add just enough water to the concentrated apple portion of the kit to get a starting gravity of 1.130 (is that even possible with these kits??) and then ferment that low and slow with some 71-B.
Anyone see any glaring issues with this? I don't brew a lot of cider and have never used a kit like this so I figured if it turns out bad it only cost a couple bucks for the yeast.
