Badass Production Brewer

Summary of Position:
Full time production brewer. Responsible for daily brewing operations on a 4 vessel, 30 BBL brewhouse at the production facility in Westchase. Production brewers rotate their schedules weekly Monday through Friday to cover daily production needs. Westchase production brewers ensure that wort meets recipe specifications with quality and safety being paramount while meeting production goals.

Duties & Responsibilities:Understand completely all policies, procedures, standards, specifications, guidelines and training programs for beer and beverage fermentation, cellaring, and serving.Perform all duties pertaining to the brewing process from wort production, fermentation, post fermentation, yeast management, cleaning and sanitizing tanks and assisting with any cellar tasks needed. Track fermentation times for each beer so scheduling can be accurate for future batches.Occasionally centrifuge beer during transfer from FV to BBT, we can train on centrifuge operation. Count and harvest yeast, calculate pitch rates.CIP/Sani tanksAbility to overcome daily obstacles and complete the task, problem solve and implement solutions. Engage guests in the brewery on tours and ensure that all guests feel welcome and engaged with the brewing staff.Achieve company objectives in quality, appearance of facility and sanitation and cleanliness through constant attention to detail; and creating a positive, productive working environment with all the brewing staff.Prepare all required paperwork, including forms, reports and schedules in an organized and timely manner.Ensure that all equipment is kept clean and in excellent working condition through personal inspection and by following preventative maintenance programs.Fully understand and comply with all federal, state, county and municipal regulations that pertain to health, safety and labor requirements of within the brewery.Conduct yourself in professional manner at all times when representing the brand. Be able to assist with events including set up and break down when needed.Create new recipes on pilot system and assist with trials as directed.

Qualifications:Be 21 years of age.Be able to communicate and understand the English language.Have on the job training in professional brewing and a minimum of two years of professional brewing experience.Have knowledge of beverage service and craft beer style knowledge. Have a complete and thorough knowledge of cellaring, and draft systems, including draft system cleaning and maintenance.Working knowledge of beer production including recipe development, beer style/quality standards, sanitation, yeast propagation, and quality control.Possess excellent skills in electronic communication systems and office management software including: MS Word, MS Excel, Ekos and the like.Be able to work in a standing position for long periods of time (up to 10 hours).Be able to reach, bend, stoop and frequently lift up to 50 pounds, and occasionally lift up to 100 pounds.Ability to work in non-climate controlled Florida summer environment. Must have the stamina to work 50 to 60 hours per week.Ability to go up on a scissor lift to dry hop tanks 20 to 30 feet upHave a flexible schedule and be able to rotate weekly with other brewers to cover production needs.
