So as I start planning my next batch of mead, I am planning to add some fresh apples to the batch after fermentation. My question is, if I make a 2-3 gallon batch in a carboy, is it OK to store in a 5 gallon bucket with the apples? I know introducing too much oxygen can cause issues. What has been your experience? TIA.

The general recommendation is that you want as little headspace as possible to minimize that O2 interaction. I would recommend getting a 3 gallon Fermonster as it is a wide mouth and holds almost 3.5 gallons to allow for displacement.
If you have access to CO2, a blanket of it over the top right before sealing it up will help.
