Live Oak Brewing is seeking a full-time cellar operator to join our three person brewing / cellar team. The position will be responsible of all assigned cellar beer in process before packaging. The bulk of cellar operation is made up of the following tasks -
Monitoring of Yeast in Fermentation and Conditioning
Fermentation to Conditioning Transfer
Conditioning to Brite Transfer; Lenticular Filtration to Brite
Carbonation of Brite Beer
Live Oak's Manual Yeast Harvesting from Fermenter
General Cleaning Other procedures and processes to understand -
Cleaning and sanitation practices of tanks, hoses, and fittings; proper dosing and titration
Understanding of fermentation science and the elements of lagering
O2 mitigation, CO2 applications
Understanding of pressure differences, fluid dynamics, positive pressure, negative pressure (tank vacuum), pumps
Understanding lenticular filtration
Record keeping
Communicating with packaging team as necessary
Lab work for yeast viability and vitality
Interface with wort to cellar
Ability to troubleshoot and solve problems related to product and/or equipment
Participate in QA/QC sensory analysis and training
Interest in cooking Other General Requirements -
Typically, the Cellar Operator is required to stand and/or walk for 8-10 hours a day. These employees frequently lift up 50 pounds at a time and occasionally may need to maneuver yeast brinks weighing up to 165 pounds. Previous cellar experience is required, compensation based on experience. Candidates are required to be fully vaccinated for COVID-19 unless a reasonable accommodation is approved.
