Mocama Beer Company, located on beautiful Amelia Island in northeast Florida seeks a Head Brewer with at least 5 years of experience. We have been open for two years and have several core beers firmly established in the local market and offer seasonal and specialty beers on a rotating basis. We have a three vessel, 30 barrel brewhouse and 480 barrels of fermentation capacity with much room for future expansion. We are looking for a long-term fit at our Head Brewer position, which we expect to evolve into a Director of Brewing Operations position. RESPONSIBILITIES & ESSENTIAL DUTIESResponsible for every function of the beer production process and daily operations of the production department including brewing, aging, blending, and packaging our beers. We have a PS Angelus 6 head canning system. We currently have a production brewer, cellarman and part-time cellarman. The head brewer will manage this team and hire a new production/assistant brewer in 2023. The brewer will work with the Operations and Sales Team to create and and follow brewing schedules, including procurement of necessary ingredients to meet production schedules.Must ensure that all equipment is properly maintained, cleaned and ready to meet production schedules. Our cellarman is excellent with cleaning and maintenance SOPS. The head brewer will review existing SOPS and make recommendations as appropriate.Must ensure the maintenance of accurate and thorough records of the beer production, cellaring and yield including proper documentation of ingredient usage and depletion for inventory purposes as well as accurate recipe maintenance. We currently use EKOS as our brewery operations system.As part of a robust QA/QC program, the head brewer must also record and maintain critical control points throughout the brewing process to ensure the quality and consistency of our beer in the market.Must quickly learn to brew our several core beers for consistency of taste, aroma and appearance while advising any improvements in process that may reduce time or costs while retaining the full quality of the product.Will also develop new recipes for seasonal and specialty beers in accordance with market tastes and demand. Creating variety for the tasting room is also an essential function. Creativity and innovation is encouraged.Must ensure the production facility is maintained in accordance with all OSHA and applicable local health code standards.Establish, implement and oversee proper maintenance schedule of all equipment in the production department including brewing equipment, cellar equipment, mill, boiler, chiller, air compressor, canning line, keg washer, keg filler, production cooler, service cooler, CO2 equipment, and ice machine. Assist in the design specifications, installation and commissioning of future equipment expansions.Will work with the Operations and Sales Team to execute all packaging and beer shipping operations.Will work with the Operations and Sales Team to determine packaging material needs including cans, lids, labels, case trays, kegs and wood barrels as needed.Represent Mocama at many if not all industry events, on-site tours, tastings, festivals and more. We opened our 3,500 sq. ft. tap room in November of 2020. Fully renovated from an old 1950's car dealership, we spared no expense and fully embraced its mid-century charm. It boasts 24 taps, a big, beautiful bar, ample seating and custom walnut lounge furniture. It's a tactile space that embodies sophistication and comfort. But here you will find zero pretentiousness - just enjoyment.
