Greetings and salutations!
I've been an avid home brewer for over a decade now cranking out everything from award winning beer, mead, wine, and the occasional odd concoctions like Mt. Dew wines, Apple Jack, etc. A few years ago, my wife bought me a T-500 with the reflux column for Christmas. I toyed with it and made about 2 gallons of high ABV (94%) vodka, thought it was cool, and put it on the shelf for a few years. I've always wanted to get into distilling, but timing is everything and the fact that I dont drink much alcohol makes for funny looks and reactions. In the three years the T500 has been shelved, I've bought the alembic dome, the copper condensor, a couple of SS tri-clamp adapters, a sightglass, and a 58 gallon used olive drum (HDPE - food grade). I also purchased a 50# sack of flaked corn and 50# sack of flaked rye. With all of my brewing equipment, enzymes, etc, it's a very simple transition into distilling.
Distilling brandies and liquours is mostly what I am looking at doing.... however.... I hava a hankerin' to make scotches, bourbons, whiskey's, and other spirits as well. From what I've read and experienced... corn is a PITA, so I'm here to learn and ask questions of more experienced folks, and maybe make some good things along the way.
